Midsummer weekend with friends, new and old, lots of food, laughter, drinks and swims. We started the Friday with an exciting (but secret for now!) happening. We then had some bubbles by the sea and walked back home with the picked wildflowers. Dinner, open fire and friends until the small hours. And what an exciting and beautiful weekend it was. So much so, that when Sunday came I was absolutely exhausted! So after a long walk in the forest, we took a dip in the sea and headed home for some fika and a sleep in the garden.
I made a beautifully rich chocolate cake topped with whipped cream and the sweetest cherries.
INGREDIENTS
100 g butter
2 1/2 dl/250 g sugar
2 eggs
1 dl/100 g flour
3 tbsp cacao
100 g good quality dark chocolate
1 splash of vanilla extract
TOPPING
3dl/300g whipping (double) cream
Cherries
Preheat oven to 175°C/250°F.
Melt the butter and then add the chocolate – and set aside.
Whisk eggs and sugar together in a clean bowl.
Mix the dry ingredients together.
Sift the dry ingredients into the egg and sugar mixture and then fold in the butter and chocolate mixture
Mix well.
Using a spatula, add to the baking tin and place in the preheated oven for 15-17 minutes.
Let the cake cool and spoon the cream. Top with cherries and serve!
After too much cake and coffee we decided that a trip away would do us good. So we’re heading to a Scottish island on Wednesday for a couple of days. Can’t wait to show you all the beautiful scenery.
