Admittedly, I have never been one for Halloween. I dislike commercialisation, buying things just for the sake of buying things. But, the end of October is also a great time for buying pumpkins and squash – using them for decoration and then making a meal out of them! As mine are still decorating the mantelpiece, I thought I would share my top squash recipes that I’ve collected over the years and a good playlist whilst you have a wee browse.
First up – the playlist. It’s a mix of soul, blues, Hungarian folk music, old country and some chanson franchise.
Recipe wise we got Braised squash with chickpeas and harissa. If you do not know about Yotam Ottolenghi then you have been missing out a lot! This amazing chef makes some beautiful food and the braised squash with chickpeas and harrisa is one not to be missed!
The second recipe is Squash gnocchi with caraway and black garlic – these are lovely just as they are, but serve them with a spoonful of soured cream if you want to make the dish a little richer. With its clash of orange and black, this is about as autumnal a plateful as they come.
The third one is Rough squash mash with miso, chilli and cinnamon – this is a perfect side dish and goes well with meats or tofu. All recipes can be found here. Happy Halloween my friends!
